Usually what happens when you connect the usb port to your computer you are given a choice of two modes (this happens on my 30D at least) and one mode is for transferring files and the other is for tethered shooting.

Tethered shooting is very popular in a studio setting. This allows you to instantly see on a big monitor the color and focus and also means that the images are already on your computer instead of having to download them later. Often, when doing studio shoots you may have an art director, stylist, and other people and being able to show them instant feedback is very valuable. For myself when shooting models I will use tethered shooting so that the model can see the pictures immediately, this helps beginning models to help refine their looks and poses.
